A former defensive back at Tennessee, Jay Shoop joined the USF staff as a graduate assistant for defense prior to the 2022 season. Jay joined forces with his father, Bob, who took over as the Bulls' defensive coordinator in December of 2021.

- Joined the football staff in the spring of 2022 as a defensive graduate assistant.
- Joined the football staff in May 2021 as an offensive graduate assistant
- Most recently was a defensive student assistant for the Volunteers
- Did film breakdown and worked with defensive backs
- Also worked as a strength & conditioning intern with the program
- Was a four-year member of the Tennessee football team, playing both wide receiver and defensive back
- Four-time member of the SEC Academic Honor Roll
- Earned Vol Scholar Status for academic achievement
- Numerous times, was named Scout Team Player of the Week (Offensive, Defensive and Special Teams)
- Pursuing his MBA in Sport Management here at FAU
- Graduated from Tennessee with a BS in business analytics in May 2021
